Preheat oven to 350
Peel 4-5 whole garlic cloves, cover with olive oil in a small oven-safe container (ramekin) and bake for 20 minutes.
Remove garlic to a plate and mash into paste with a fork. Save the oil.
Turn on the broiler
Take a slice or two of Texas Toast (plain white bread, but thick – Wonderbread makes it) or thick sliced Italian bread
Generously brush both sides of the bread with the leftover garlic-flavored oil
Spread the garlic paste on both sides of the bread
Lightly salt and sprinkle chopped thyme (or maybe parsley, but I haven’t tried that) on both sides
Broil on sheet pan til browned, then turn and brown the other side.
Haven’t tried this yet, but I want to try sprinkling with grated mozzarella and/or parmesan before broiling next time.
