I'm interested in new hot sauces and this shop has a lot. As most of them are American I wanted to ask you if you have an advice for me. With hotness, or pepperiness, I tend to scale 6 to 8.
One of my favorites is the one on the picture. Nice tasting and hooottt :drool

Hehehe. Hot sauce. Love the stuff. Check this (http://extremefood.com/index.php) out...(now, this isn't me. Just a guy with the same name. I haven't had a chance to try this stuff out yet, but I hear it's smokin'.

I love hot stuff. Lately, I've tended to use the actual chilis to spice my food up though. Some hot sauce has so much extra stuff in it...like sugars and other unwanted ingredients.
For a great taste and medium heat, I use jalepenos with the seeds and membrane in tact. I just LOVE the taste of jalepenos. For the uber hot, I use Habeneros! To get a great smoky flavor, I add some ancheaux peppers. They are a dried poblano pepper that impart a lot of taste and no heat. Interestingly enough...I work at a restaurant named Ancheaux's!
I think this recent fascination has come from working at a restaurant where we prepare everything fresh, and watching too much of Alton Brown's Good Eats.
Now Dave's Insanity sauce...well that just insanity! That stuff is ALL heat an NO flavor. I dont think I've ever actually used it, except to swig a cap full on a dare.:angry021

Ah, nothing like the pain/pleasure of a good wicked hot sauce. I tend to stay about the 6-8 scale myself as most of the hotter sauces tend to be all heat and no flavor. I do however keep a few around just for fun. When someone comes over and tells me how much they like spicy food and can eat anything, I let them have a little sample of Da Bomb (http://www.originaljuan.com/ssl/shopping/products/?pg=358b18ca-e79e-4636-bede-a0e1e62cdedf) :)
We have a great sauce shop here in Austin down on 6th street. Definately check it out if you're ever in town. www.tearsofjoysauces.com

I love heat but it has to have flavor. I'm not into heat just for heat sake. I have a bottle or two of pure heat that I'll add one or two drops to perk something up but everything else is just a flavor enhancing. unfortunately, my wife and daughter are both heat wimps although my wife will eat Kung Pao Chicken. Give me a nice spicy/hot curry and I'm happy. Check this place out.

For anyone who's after flavour and not just heat, make sure you pick up some Blasting Sauce if you ever see it around (and if it's around, it's pretty hard not to see it). Super mild in the heat department, but the flavour is superb.

I love hot stuff.....I agree that so hot it has no flavor is wrong....just plain wrong!! I can handle pretty hot, that is until the next day. Thats when it hurts me. Still looking for that striped chile pepper that Homer simpson ate after he dipped his tongue in candle wax.

Last weekend my nephew and his lovely Peruvian wife drove their boat across the lake for a visit. At breakfast she asked for some hot sauce to put on her eggs. I offered her some Louisiana hot sauce and half kidding I pulled out the Insanity sauce and showed it to her. She went for the Dave's and to my utter surprise she didn't go running for the water or even flinch when eating it. It was amazing to see.

I have some samples of different dried chiles I use to perk up sauces and such: De Ancho, Habanero flakes, New Mexico chiles, etc, etc.
Have some Melinda's XXXXtra Reserve and Ring of Fire Garden style sauce for when I want heat in the liquid form. The Ring of Fire is nice, has heat but flavour, Melinda's a bit more hot but still a good taste to it.

All kidding aside, I love hot sauce, but I do also want some flavor. Ironically, most of the hot, hot stuff is Tex-Mex. I grew up in New Mexico, and there you have much more of the indian influence, so you have some heat but a lot of flavor.
I love New Mexico chiles. If I could, I'd have a ristra of them available to use, but they would mold and go bad in the humid South pretty fast. I also love chile rellenos. Las Cruces (where I grew up) isn't too far away from Hatch (http://www.nmchili.com/), New Mexico, the chile capital of the world!

When I was cooking, we would give the dishwashers a free meal iffin' they would eat a habanero without anything to cool them down!
I love the hot stuff! Dave's, Scorned Woman, X, anything with a skull-n-crossbones on it. There are many out there that are hot just for the sake of being hot, but there is a lot of flavor out there too.
Gentlemen, remember that when handling hot peppers, wash your hands at least five times with soap and hot water, then lick your fingers to be sure there is no residual oils left on your hands (if your tongue registers anything but soap, wash again) before visiting the bathroom. You will regret it if you don't! DAMHIKT!

There are few foods I eat that do not have some type of hot sauce. All my life I was a spicy food guy. The family specialty, tuna sandwiches are not even considered complete without a large bottle of Crystal brand Louisiana style near by, and tex mex style mexican food is not even considered without at least a 1/2 bottle at teh ready. This is a great all around sauce, vinegary in a good way, and works in scrambled eggs, bloody mary's etc. I figure I go through approximately 4 OZ of this type of hot sauce per month, personal consumption. For a more complex flavor profile, you might want to try Tapatio, in the same vein, but useful for less things as a result of it's complexity. I will still reach for crystal over Tapatio in my house, though for Mexican style seafood restaurants, I must give the nod to Tapatio.
Next up, Sriracha (http://en.wikipedia.org/wiki/Sriracha). The red rooster of the Asian world. Think of a garlicy, slightest hint of sweet and medium spicy all around sauce. Once in your home, you will be putting this on eggs, sausages, hot dogs, using it as a bbq base or additive, using it on the tuna sandwich (yes, that may be the all time fave of mine) and in place of ketchup at nearly every occurrence. I go through a bottle of this sauce every 4-6 months. (more during summer months b/c of bbq.)
Raw chili peppers. All kinds of peppers with all different heat content and flavor profiles. The gents above who speaks of peppers of NM is on the money here. (My Mom lives in ALBQ, and I get peppers in every meal if I can)
You cannot really eat Thai food, Filipino food, or any food from SEA without a small dish of fish sauce (another thread entirely) with a a squeeze of the "local lime", and some diced chili. This is the smartly feared "Mouse Sh!t pepper" (the English translation of the Thai name) Two of these miniscule bad boys will leave you scortched, sweating and endorphin rushed. At the expert level, you need only have one in your non dominant hand, nibbling off a millimeter at a time while you eat a complete meal.

Me too. I keep a bottle of Melinda's on the dining room table and another on my desk at work. I use it like most people use salt and pepper. We always keep a bottle on reserve in the pantry to make sure I never run out.

Try DAVES Inanity gormet hot sause....it reads...A great cooking ingredient for sauces, soups, and stews, Also strips waxed floors and removes driveway grease stains. Enjoy.

I own a number of super hot sauces, mostly from Blair's Death Sauces. I have a bunch of his reserves, including his 16 Million Reserve which is basically just crystal heat.. lol
If I ever get around to it I will take some pictures of the collection.

I put a few pepper and tomato plants in between the flowers. Wife had no problem with that. We've been eating the tomatoes lately. Peppers should be ready soon.
