I want THE best frozen custard recipe out there.
California is sadly behind the curve in many ways
and this is something I must have but cannot find.
Please help me.

Best stuff I had was in Jersey. Sorry, I can't help you out with a recipe though.

Just kiddin man. I've got a rice pudding restaurant I have to hit every time I go.

The best Mexican food I ever had was at Chinatown in Japan. :D

Ive got no less than 10 grrrrreat Mexican places within 2 miles of me.

Gilroy has an ethnic breakdown of 47% Caucasion, who know "real" Mexican food when they taste it. :D, and 47% Hispanic, who know how to cook it. Do we know Mexican food or what? We have over 30 Mexican restaurants and Taquerias and 3 Mexican supermarkets in Gilroy alone. The best places to go? Go out early on a Saturday morning and look for the most crowded Mexican food parking lots. Usually they are some small hole in the wall place. That place will have the best tasting, authentic, cheapest Mexican food around and Menudo or Posole will be at the top of the list. Menudo is a Friday night hangover remedy for the migrant farm workers. :rofl

OK, back on topic:

This basic frozen custard recipe is from the Culinary Institute of America (CIA) in Hyde Park, New York.


1 tablespoon cornstarch
1/3 cup sugar
1 1/2 cups milk (scalded)
2 eggs, seperated
1/8 teaspoon salt
1 cup heavy cream, whipped
2 teaspoons vanilla


Mix cornstarch and sugar, then stir in hot milk and cook in a double boiler for 15 minutes, stirring occasionally. Remove from heat. Beat the egg yolks and gradually add to the hot mixture while stirring. Chill. Beat egg whites until stiff and fold into the chilled mixture. Add salt and fold in whipped cream and vanilla. Pour into cups and freeze.

You can top this with whatever you like.
